Easy Tomato Soup Recipe

With only 5 ingredients, you can make a wonderful tomato soup on the stovetop. It is a hearty recipe that requires little preparation and goes great with grilled cheese.

 

With only 5 ingredients and little preparation, you can make this thick and savory tomato soup dish. Easy to prepare on the stovetop, this substantial soup is ideal for meal prep and freezer dinners. Additionally, it is the ideal addition to any grilled cheese sandwich!

About the Ingredients:

Crushed tomatoes in a can: I adore purchasing the fire-roasted varieties. It adds flavor right away. You might also begin with whole, peeled tomatoes in a can.

Vegetable broth: You can use chicken broth in place of the recommended vegetable broth if you don't want to make the recipe vegetarian. Compared to just using water, broth has more taste. Water can be used, though, if you're in a pinch.

To further enhance the flavor, finely chop a large white onion. Because the flavor is so much stronger with fresh onions, I wouldn't advise using onion powder. Since you'll be blending it all together, there's no need to cut it extremely finely.

It can seem excessive to use 3 tablespoons of butter, but this is what gives the tomato soup its smoothness. Use vegan butter or olive oil to make the dish vegan.

Use fresh garlic to give the soup extra flavor. Alternately, you could use frozen garlic. I wouldn't advise using garlic powder, just as I wouldn't advise using onions.

  •  1 28-ounce can crushed tomatoes
  •  2 cups vegetable broth
  •  Salt and pepper

Instructions

  • The onions should be softened after cooking them in butter. Due to the quantity of butter we are using, you may start to notice some bubbles, but that is entirely acceptable. Avoid letting the onions brown. But some browning is acceptable.
  • Cook the garlic until aromatic after adding it. To prevent the garlic from burning, sauté it for only 30 seconds.
  • Crushed tomatoes and all of the can's juices should be added.
  • After that, combine everything with the vegetable broth.
  • Cook for 30 minutes uncovered after simmering. If you'd like, you can cover it, but it's not required. If you don't cover it, the flavor will actually be stronger because it will get more concentrated as some of the liquid evaporates.
  • Make a smooth soup by blending it with an immersion blender. The soup can be be added to a blender and blended in small batches if necessary. If you don't have a blender, make careful to finely chop everything and avoid pureeing the soup.

Some Tips for Tomato Soup Recipe:
